Die Valpolicella-Weine stammen aus den sanften Hügeln des Valpolicella-Gebiets und werden aus den einheimischen Rebsorten Corvina, Corvinone, Rondinella und Molinara in einer Vielzahl von Stilen hergestellt. Sie reichen von lebhaften und leicht zu trinkenden Rotweinen bis hin zum sehr süßen Recioto-Dessertwein.
Wie wird Valpolicella hergestellt
Die Standard-Valpolicella-Weine werden aus Corvina und Rondinella hergestellt, wobei oft auch etwas Molinara und Corvinone in der Mischung enthalten sind. Sie sind in der Regel recht leicht und elegant mit attraktiven Noten von roten Kirschen und viel Frische. Valpolicella Ripasso-Weine sind die nächste Stufe und werden auf den Traubenschalen vergoren, die bereits für die Herstellung von Amarone verwendet werden. Dies trägt dazu bei, dem fertigen Wein viel Charakter, Komplexität und reiche Noten von Trockenfrüchten zu verleihen. Es gibt auch den süßen Valpolicella Recioto und den Valpolicella Superiore, die aus Trauben hergestellt werden, die über den Winter getrocknet wurden.
Valpolicella als Speisenbegleiter
Die schiere Vielfalt der Valpolicella-Weine macht sie sehr vielseitig, wenn es um die Kombination mit Speisen geht. Standard-Valpolicella passt gut zu Wurstwaren, Hartkäse und Nudelgerichten auf Tomatenbasis, während Ripasso-Weine eine größere Tiefe für reichhaltigere Gerichte wie geschmortes Rindfleisch, Rippchen oder Schweinebraten haben. Süße Recioto-Weine eignen sich hervorragend anstelle eines Desserts oder zu Desserts mit Schokolade, Trockenfrüchten oder dunklen Beeren.
