Papari Valley

Geschichte

Das Weingut Papari Valley ist nach dem georgischen Wort für "Pferdemähne" benannt, zu Ehren der welligen Hügel des Tals, auf denen ihre Reben wachsen. Insgesamt sind 93 Hektar mit einheimischen Rebsorten bepflanzt, die biologisch angebaut werden.

In der Kellerei werden die Früchte mit wilden Hefen und in großen Tontöpfen, den sogenannten Qvevri, vergoren, von denen man annimmt, dass sie hier in Georgien seit der Antike verwendet werden.
